Pour the frozen raspberries into a saucepan and start heating slowly until completely softened, which takes about 5 minutes. Remove the mixture from the heat, blend into a smooth sauce, and strain through a sieve to catch the seeds, then let it cool.
Prepare strong filtered coffee or espresso. Let it cool.
Prepare a baking dish approximately 20x10 cm. Separate the egg yolks from the whites and whisk the yolks with sugar in a bowl until a light yellow foam forms. Whisk in the mascarpone with the whipped yolks. If you are concerned about raw eggs, whisk them over a double boiler. Blend 30 g of freeze-dried raspberries into a powder, sift it through a fine sieve into the mascarpone mixture, and mix until a pink cream forms.
