Rinse the capers, pat them dry, and chop them finely.

Take the meat out of the fridge and slice it into very thin slices. Cut these into matchstick-thin strips. Cut the strips into small pieces and then chop them finely. Work quickly so that the meat does not warm up.

Quickly mix the meat with the other ingredients using a fork. Shape it into a small mound on the plate, making a small well in the center.
Chef's tip
For further seasoning options, you can add a teaspoon of lime juice, optionally a chopped anchovy, and a few finely chopped flat-leaf parsley leaves.
