Preparation method
Take the cream out of the fridge and let it come to room temperature. Mix with the stabilizer and whip at high speed until the cream is stiff. Carefully fold in the chopped tomatoes, chives, and lime juice. Clean the horseradish and grate it finely. I recommend 2-3 tablespoons. Also, fold the horseradish into the foam and season with salt and pepper.
Spread a thin layer of the flavored foam on each slice of ham and roll it up. Alternatively, you can form a hollow roll from the ham and fill it with a pastry bag. Using a potato peeler, cut 6 thin slices from the cucumber and wrap each roll.
Chill in the fridge and serve with toasted bread.
