Clean the shrimp. First, remove the head, then peel off the shell and legs. Leave the last segment of the tail. With a sharp knife, make a 2 mm longitudinal cut to expose the vein, which you then remove. Make the same cut on the underside of the shrimp and also remove the vein. Rinse the shrimp thoroughly and drizzle with 1 tablespoon of lemon juice.

Coat the shrimp in starch, then in salted egg yolks, and finally in panko breadcrumbs. Fry in hot oil until golden brown.

For the dressing, mix sour cream, mayonnaise, ketchup, orange juice, and 1 tablespoon of lemon juice. Season with salt and pepper.
