  • Approx. 470 g carp fillet with skin
  • 2 teaspoons tomato paste
  • 2 teaspoons French mustard
  • 2 spring onions
  • 1 tablespoon pickled capers
  • 2 sprigs of fresh thyme
  • 2 tablespoons lime juice
  • 1 teaspoon olive oil
  • Salt
  • Pepper

  • Toast bread
  • Chili flakes for sprinkling - optional

Skin the carp fillet, thoroughly remove all bones, and cut the meat into very fine cubes. Then, use the flat side of a knife to mash the meat into a tartare consistency.

Mix the meat with the tomato paste, mustard, olive oil, and lime juice. Stir together. Finely chop the thyme, spring onion, and capers. Mix into the carp. Season with salt and pepper, and place in the fridge to chill.

Serve the tartare with freshly toasted bread and sprinkled with chili flakes.
