INGREDIENTS
- Approx. 470 g carp fillet with skin
- 2 teaspoons tomato paste
- 2 teaspoons French mustard
- 2 spring onions
- 1 tablespoon capers in sweet and sour brine
- 2 sprigs fresh thyme
- 2 tablespoons lime juice
- 1 teaspoon olive oil
- Salt
- Pepper
INGREDIENTS FOR FINISHING
- Toast bread
- Chili flakes for sprinkling - optional
INSTRUCTIONS
- 1Remove the skin from the carp fillet, thoroughly remove all bones, and cut the meat into very fine cubes. Then, using the flat side of a knife, mash the meat further into a tartare.
- 2Mix the meat with tomato paste, mustard, olive oil, and lime juice. Stir together. Finely chop the thyme, spring onion, and capers. Add them to the carp. Season with salt and pepper, then chill in the refrigerator.
- 3Serve the tartare with freshly toasted bread and sprinkled with chili flakes.
