FRIES INSTRUCTIONS

Wash the zucchini, dry thoroughly, and cut into fries 6 cm long and 1 cm wide. Salt them and let stand for 20 minutes. Then wipe off any condensed water with a paper towel.

In a saucepan, heat a deep layer of oil to 180 °C. Whisk the eggs in a bowl.

Coat the zucchini fries first in all-purpose flour, then in the whisked eggs, and finally in breadcrumbs. Immediately fry them in the hot oil until golden brown. Place the finished fries on a plate lined with a paper towel to absorb excess fat.

Chef's tip

Caution: grate only the yellow part of the lemon zest. The white part is bitter.
