INGREDIENTS
- 600 g very high-quality beef (for example, from aged knuckle)
- 4 egg yolks (very fresh)
- 4 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon capers
- 2 shallots
- 1–2 teaspoons Worcestershire sauce
- a few drops of Tabasco
- 4 large potatoes
- salt to taste
- pepper to taste
- oil for frying
Instructions
- 1Finely grind or chop the meat with a knife, or buy meat already prepared specifically for tartare.
- 2In a bowl, mix mayonnaise, mustard, egg yolks, Worcestershire sauce, and Tabasco. Add chopped capers and shallots. Mix everything together.
- 3Stir in the meat, season with salt and pepper. Let it rest in the refrigerator for 10–15 minutes for the flavors to meld.
- 4Meanwhile, cut the potatoes into fries and fry them in hot oil over medium heat for about 8–10 minutes until golden brown.
