INGREDIENTS

  • 600 g very high-quality beef (for example, from aged knuckle)
  • 4 egg yolks (very fresh)
  • 4 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon capers
  • 2 shallots
  • 1–2 teaspoons Worcestershire sauce
  • a few drops of Tabasco
  • 4 large potatoes
  • salt to taste
  • pepper to taste
  • oil for frying

Instructions

    Finely grind or chop the meat with a knife, or buy meat already prepared specifically for tartare.

    In a bowl, mix mayonnaise, mustard, egg yolks, Worcestershire sauce, and Tabasco. Add chopped capers and shallots. Mix everything together.

    Stir in the meat, season with salt and pepper. Let it rest in the refrigerator for 10–15 minutes for the flavors to meld.

    Meanwhile, cut the potatoes into fries and fry them in hot oil over medium heat for about 8–10 minutes until golden brown.
