Finely chop the celery. Halve the avocado, remove the pit, and scoop out the flesh with a spoon. Then cut it into 0.5 cm cubes.

Halve the eggs, put the yolks into a bowl and mash them with a fork with mustard and lemon juice. Add mayonnaise and mix.

Finely chop the egg whites and stir them into the mashed yolks.
Chef's tip
Instead of dicing, you can roughly mash the avocado with a fork. The salad will have a different texture. Or you can dice part of the avocado and mash part of it with a fork. You can add a few drops of Tabasco to the salad.
