INGREDIENTS
- 6 hard-boiled eggs
- 2 ripe avocados
- 80 g celery stalks
- 30 g Dijon mustard
- 15 g lemon juice
- 30 g mayonnaise
- 1 tablespoon finely chopped chives
- 1 teaspoon salt
- 1 coffee spoon freshly ground pepper
- 2 large tomatoes
- 8 slices of toast bread
INSTRUCTIONS
- 1Finely chop the celery. Cut the avocado in half, remove the pit, and scoop out the flesh with a spoon. Then cut it into 0.5 cm cubes.
- 2Cut the eggs in half, put the yolks into a bowl and mash them with a fork with mustard and lemon juice. Add mayonnaise and mix.
- 3Finely chop the egg whites and stir them into the mashed yolks.
- 4Add the chopped celery stalks, avocado, chopped chives, salt, and pepper and mix. Chill in the refrigerator. Season the spread with salt if necessary.
- 5Slice the tomatoes into 1 cm thick slices. Toast the bread slices, place a tomato slice on each, and then a portion of the spread on top.
Tip
Instead of dicing, you can roughly mash the avocado with a fork. The spread will have a different texture. Or you can dice part of the avocado and mash part of it with a fork.
You can add a few drops of Tabasco to the spread.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
