INGREDIENTS FOR GALETTES

  • 200 g buckwheat flour
  • 50 g all-purpose flour
  • 1 egg
  • 1 tablespoon vegetable oil and oil for frying
  • pinch of salt

FILLING INGREDIENTS FOR 1 SERVING

  • 1 slice of ham
  • 20 g Gruyère cheese
  • 1 fresh egg
  • pinch of freshly ground pepper
  • salt

INSTRUCTIONS

    Pour both flours into a bowl, add 250 ml of water, mix, add the egg and mix again. Pour in another 250 ml of water, stir in salt and oil, and let the dough rest at room temperature for 2 hours.

    Cut the slice of ham into 4 equally sized strips, grate the cheese.

    Heat a pan over medium heat, add 1/2 tablespoon of oil, and pour in a ladleful of batter. Tilt the pan to spread the batter very thinly.

    Fry the galette on one side until golden brown. Flip it over and crack an egg into the center. Season it with salt and pepper, then arrange ham around the four sides and sprinkle with cheese.

    Fold the sides of the galette towards the egg so that the egg remains uncovered, and carefully transfer it to a plate.
Tip
For frying, you will need a non-stick pan Ø 28 cm. For preparation, you will need a spatula for flipping galettes.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
