  • 40 g sliced bacon
  • salt
  • freshly ground pepper
  • chives for garnish

INSTRUCTIONS

    Crack the eggs into a bowl.

    Heat a pan over medium heat. Place the bacon slices in it, season with pepper, and cook for 1 minute.

    Reduce the heat to one-third, pour the eggs over the bacon, and cook for another 5 minutes or until the whites are set.

    Season with salt to taste and garnish with chopped chives.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
