Preparation method
Preheat the oven to 220 °C.
Pour the flour into the bowl of a stand mixer, add sugar, baking powder, and salt. Using the dough hook, start mixing at medium speed. Cut the butter into cubes and gradually add it until the entire amount is incorporated into the dough. The dough will start to resemble coarse breadcrumbs. Reduce the mixer speed and slowly pour in the lukewarm milk until a smooth dough forms.
Flour a work surface and turn out the prepared dough onto it. Roll it out into a 0.5 cm thick disc and cut out circles with a cookie cutter. Rework the remaining dough, roll it out again, and cut out more circles.
Chef's tip
For baking, you will need a round cookie cutter Ø 6 cm.
