INGREDIENTS
- 350 g all-purpose flour
- 150 g semi-coarse flour
- 180 ml milk
- 20 g fresh yeast
- 70 g butter
- 1 egg yolk and 2 eggs for brushing
- 70 g granulated sugar
- 6 g salt
- honey

INSTRUCTIONS
- 1Prepare the dough using the 'omládek' (starter) method: in a stand mixer bowl, mix all-purpose and semi-coarse flour, make a well in the center, pour in two-thirds of the lukewarm milk, and crumble in the yeast. Gradually mix in flour from the sides until a batter forms, about the consistency of pancake batter. Dust the surface with all-purpose flour and let it rise in a warm place for 30 minutes.
- 2Melt the butter in a saucepan over low heat. Add the remaining milk, sugar, salt, egg yolk, and melted butter to the bowl with the starter. Using a stand mixer with a dough hook attachment, knead on low speed until a smooth, non-sticky dough forms. This takes approximately 10 minutes. Let the dough rest in a warm place for 30 minutes.
- 3Preheat the oven to 160 °C.
- 4Divide the dough into 80 g pieces and roll them into 20 cm long ropes. Coil them into spirals and tuck the end underneath the dough to prevent unravelling. Place them on a baking sheet lined with parchment paper, cover with a clean cloth, and let them rise in a warm place for 45 minutes. Then, brush the Jidáše with beaten egg, place them in the preheated oven, and bake for 15-20 minutes.
- 5After baking, generously brush the hot Jidáše with liquid honey.
Tip
Do not coil the spirals too tightly, otherwise they will rise too high in the oven.
