INGREDIENTS

  • 2 eggs
  • 400 ml milk
  • 1 tablespoon melted butter
  • pinch of salt
  • jam for spreading
  • powdered sugar for sprinkling
  • oil or clarified butter for frying pancakes
  • 200 g all-purpose flour

INSTRUCTIONS

    In a bowl, whisk together eggs and milk, add butter, salt, and gradually whisk in flour. Let rest for at least an hour.

    Grease a non-stick pan with oil or butter and place it on the stove over medium heat. Pour a portion of the batter with a ladle and spread it over the entire surface of the pan with a circular motion. Fry the pancakes until golden brown on both sides.

    Place the finished pancakes on a plate, spread with jam, roll them up, and sprinkle with powdered sugar.
Tip
Wipe the pan with a pastry brush. This will ensure the fat is evenly distributed everywhere, and your pancakes will fry well. If you've used too little oil and the pancake is sticking, run a feather or pastry brush around the sides of the pan. The oil will evenly flow under the batter to the center, and the pancakes will still not be greasy. It's best to use a special pancake pan. It has a non-stick surface and low, sloped edges, so the pancakes don't stick and are very easy to flip.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
