INGREDIENTS

  • 200 g plain wheat flour
  • 150 g creamy yogurt
  • 100 g kefir
  • 100 g semi-skimmed milk
  • 2 eggs
  • 20 g melted butter
  • 1 teaspoon ground vanilla
  • 40 g powdered sugar
  • Finely grated zest of 1 organic lemon
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • A pinch of salt
  • 125 g fresh blueberries

  • Quark
  • White Greek yogurt

INSTRUCTIONS

    Sift the flour into a bowl. Add salt, sugar, vanilla, baking powder, and baking soda, and mix.

    In another bowl, mix yogurt, kefir, milk, butter, and eggs. Whisk everything together and add to the bowl with the flour.

    Now whisk everything together. Finally, add lemon zest and blueberries.

    Cook on a non-stick pan without oil on both sides.

    Serve with quark or Greek yogurt and fruit.
