Preparation method

Ingredients overview

  • 300 g cucumber
  • 200 g plain Greek yogurt
  • 1 peeled garlic clove
  • 1 tbsp finely chopped dill
  • 1 tbsp lemon juice
  • 3 tbsp extra virgin olive oil
  • 1 tsp salt

Cut the garlic lengthwise and remove the tough germ, which we discard. Finely chop the garlic.

Cut off both ends of the cucumber and slice it lengthwise. Scrape out the seeds with a spoon and coarsely grate the cucumber. Place it in a colander set over a bowl and salt the cucumber. Stir and let it sit for 10 minutes to release the water.

Squeeze the drained cucumber, mix in a bowl with the yogurt, garlic, dill, lemon juice, and olive oil. Chill in the refrigerator for 2 hours. Stir before serving.
