INGREDIENTS

  • 6 hard-boiled eggs
  • 2 ripe avocados
  • 80 g celery stalks
  • 30 g Dijon mustard
  • 15 g lemon juice
  • 30 g mayonnaise
  • 1 tablespoon finely chopped chives
  • 1 teaspoon salt
  • 1 coffee spoon freshly ground pepper
  • 2 large tomatoes
  • 8 slices of toast bread

INSTRUCTIONS

    Finely chop the celery. Cut the avocado in half, remove the pit, and scoop out the flesh with a spoon. Then cut it into 0.5 cm cubes.

    Cut the eggs in half, put the yolks into a bowl and mash them with a fork with mustard and lemon juice. Add mayonnaise and mix.

    Finely chop the egg whites and stir them into the mashed yolks.

    Add the chopped celery stalks, avocado, chopped chives, salt, and pepper and mix. Chill in the refrigerator. Season the spread with salt if necessary.

    Slice the tomatoes into 1 cm thick slices. Toast the bread slices, place a tomato slice on each, and then a portion of the spread on top.
Tip
Instead of dicing, you can roughly mash the avocado with a fork. The spread will have a different texture. Or you can dice part of the avocado and mash part of it with a fork. You can add a few drops of Tabasco to the spread.
