Ingredients

  • 250 g watermelon flesh
  • 20 ml maple syrup
  • 20 ml white wine vinegar
  • 100 g pine nuts
  • 60 ml olive oil
  • 80 g peeled red onion
  • 200 g pitted black olives
  • 1 bunch basil
  • pinch of pepper
  • pinch of salt

Instructions

    Preheat the oven to 160 °C. Spread the pine nuts on a baking sheet and bake in the oven for 10 minutes. Then transfer them to a bowl and let them cool.

    Cut the deseeded melons into 2 cm cubes. Halve the onion lengthwise and slice it very thinly. Cut the olives in half.

    In a bowl, combine the melons, pine nuts, olives, and onion, add salt, pepper, and olive oil, and mix.

    Whisk the dressing ingredients together and pour the dressing into the bowl with the salad. Mix and chill. Before serving, roughly chop the basil leaves and stir them into the salad.

    Instead of Galia melon, you can use honeydew melon or Cantaloupe melon.
