Ingredients
- 150 g chicken breasts
- 100 g all-purpose flour
- 400 ml milk
- 20 g slices of Parma ham
- breadcrumbs
- 200 ml olive oil
- 2–3 eggs
- 4 cloves of garlic
- 50 g finely chopped onion
- vegetable oil for frying
- ½ teaspoon red wine vinegar
- 50 g butter
- 7 g salt
- 1 tablespoon finely chopped flat-leaf parsley
- 1 tablespoon extra virgin olive oil
- pinch of ground nutmeg
Instructions
- 1Finely chop the chicken meat and Parma ham.
- 2Bring the milk to a boil in a saucepan, add nutmeg, stir, and remove the saucepan from the heat.
- 3In a second saucepan, heat the oil over medium heat and sauté the garlic. Add the onion and let it become translucent. Add the butter and let the onion and garlic lightly brown.
- 4Add the chopped meat and sauté it on all sides. Add the flour and sauté it for 1 minute, stirring constantly. Pour in the hot milk and mix everything thoroughly. Add the chopped parsley and Parma ham, season with salt, mix, and let cool in the refrigerator.
- 5From the cooled mixture, form croquettes 3 cm in diameter and 5 cm long. Coat each one in flour, then in beaten egg, and finally in breadcrumbs. Fry them submerged in hot oil until golden for 1 minute.
- 6Pour milk into a tall container, add pressed garlic, and blend.
- 7Pour in the oil and blend until a thick sauce forms.
- 8Season with salt and blend.
- 9Add wine vinegar and blend until a mayonnaise-like consistency is achieved.
- 10You will need an immersion blender for blending. For preparation, you will need a tall container.
