INGREDIENTS FOR FRIES

  • 600 g zucchini
  • 100 g plain flour
  • 200 g breadcrumbs
  • 2 eggs
  • vegetable oil for frying
  • 5 g salt

INGREDIENTS FOR DIP

  • 250 g sour cream
  • 10 g chives
  • 10 g flat-leaf parsley
  • 3 g mint
  • finely grated zest of 1 lemon
  • pinch of salt

INSTRUCTIONS FOR FRIES

    Wash the zucchini, dry thoroughly, and cut into fries 6 cm long and 1 cm wide. Salt them and let stand for 20 minutes. Then wipe off the condensed water with a paper towel.

    Heat a higher layer of oil to 180 °C in a saucepan. Whisk the eggs in a bowl.

    Coat the zucchini fries first in plain flour, then in whisked eggs, and finally in breadcrumbs. Immediately fry them in hot oil until golden brown. Place the finished fries on a plate lined with a paper towel to absorb excess fat.

    Finely chop the chives, parsley, and mint. Mix them with the other ingredients and chill.
Tip
Caution: grate only the yellow part of the lemon zest. The white part is bitter.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
