INGREDIENTS FOR FRIES
- 600 g zucchini
- 100 g plain flour
- 200 g breadcrumbs
- 2 eggs
- vegetable oil for frying
- 5 g salt
INGREDIENTS FOR DIP
- 250 g sour cream
- 10 g chives
- 10 g flat-leaf parsley
- 3 g mint
- finely grated zest of 1 lemon
- pinch of salt

INSTRUCTIONS FOR FRIES
- 1Wash the zucchini, dry thoroughly, and cut into fries 6 cm long and 1 cm wide. Salt them and let stand for 20 minutes. Then wipe off the condensed water with a paper towel.
- 2Heat a higher layer of oil to 180 °C in a saucepan. Whisk the eggs in a bowl.
- 3Coat the zucchini fries first in plain flour, then in whisked eggs, and finally in breadcrumbs. Immediately fry them in hot oil until golden brown. Place the finished fries on a plate lined with a paper towel to absorb excess fat.
INSTRUCTIONS FOR DIP
- 1Finely chop the chives, parsley, and mint. Mix them with the other ingredients and chill.
Tip
Caution: grate only the yellow part of the lemon zest. The white part is bitter.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
