INGREDIENTS
- 100 g beef tenderloin or aged sirloin
- 5 coriander seeds
- 2 tablespoons sesame oil
- 2 tablespoons soy sauce
- 1 tablespoon finely chopped coriander
- 1 tablespoon finely chopped chives
- ½ tablespoon finely chopped mint
- 1 teaspoon light sesame seeds
- 1 teaspoon olive oil
- 5 coriander seeds
- 5 drops Tabasco
- finely chopped red chili pepper to taste
- salt
INSTRUCTIONS
- 1Dry-roast coriander seeds in a hot pan over high heat, stirring constantly for 40 seconds. Transfer to a bowl and lightly crush.
- 2Dry-roast sesame seeds in a hot pan until light golden, transfer them to a plate and let cool.
- 3Cut the chilled meat into 3 mm cubes.
- 4Thoroughly mix all ingredients together and season with salt as needed.
- 5Chill in the refrigerator for 1 hour. Then mix again.
