INGREDIENTS

  • 100 g beef tenderloin or aged sirloin
  • 5 coriander seeds
  • 2 tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon finely chopped coriander
  • 1 tablespoon finely chopped chives
  • ½ tablespoon finely chopped mint
  • 1 teaspoon light sesame seeds
  • 1 teaspoon olive oil
  • 5 coriander seeds
  • 5 drops Tabasco
  • finely chopped red chili pepper to taste
  • salt

INSTRUCTIONS

    Dry-roast coriander seeds in a hot pan over high heat, stirring constantly for 40 seconds. Transfer to a bowl and lightly crush.

    Dry-roast sesame seeds in a hot pan until light golden, transfer them to a plate and let cool.

    Cut the chilled meat into 3 mm cubes.

    Thoroughly mix all ingredients together and season with salt as needed.
  • 5
    Chill in the refrigerator for 1 hour. Then mix again.
