PANCAKES
- 2 ripe bananas
- 170 g Greek yogurt
- 1 egg
- ½ teaspoon vanilla extract
- 100 g all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 50 ml vegetable oil
FOR SERVING
- plain yogurt
- maple syrup
- powdered sugar for dusting

INSTRUCTIONS
- 1Peel the bananas and slice them into 3 mm thick rounds.
- 2In a bowl, thoroughly mix the yogurt, egg, vanilla extract, and 2 tablespoons of cold water. In a second bowl, combine the flour, baking powder, and cinnamon. Stir the dry mixture into the yogurt mixture and mix until a smooth batter forms.
- 3Heat oil in a pan over medium heat. Spoon the batter onto the pan and form pancakes 6–8 cm in diameter. Place 3 banana slices on each pancake while frying. Once the pancakes are golden brown on the bottom, flip them and cook until golden on the other side.
- 4Place the finished pancakes on a plate and serve with plain yogurt and maple syrup, lightly dusted with powdered sugar.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
