PANCAKES

  • 2 ripe bananas
  • 170 g Greek yogurt
  • 1 egg
  • ½ teaspoon vanilla extract
  • 100 g all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 50 ml vegetable oil

FOR SERVING

  • plain yogurt
  • maple syrup
  • powdered sugar for dusting

INSTRUCTIONS

    Peel the bananas and slice them into 3 mm thick rounds.

    In a bowl, thoroughly mix the yogurt, egg, vanilla extract, and 2 tablespoons of cold water. In a second bowl, combine the flour, baking powder, and cinnamon. Stir the dry mixture into the yogurt mixture and mix until a smooth batter forms.

    Heat oil in a pan over medium heat. Spoon the batter onto the pan and form pancakes 6–8 cm in diameter. Place 3 banana slices on each pancake while frying. Once the pancakes are golden brown on the bottom, flip them and cook until golden on the other side.

    Place the finished pancakes on a plate and serve with plain yogurt and maple syrup, lightly dusted with powdered sugar.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
