INGREDIENTS
- 1 large yellow onion
- 4 tablespoons olive oil
- 100 g fresh baby spinach (or thawed and drained)
- 200 g cream cheese
- 1 tablespoon mayonnaise
- 2 tablespoons fresh parsley (finely chopped)
- 80 g Parmesan (finely grated)
- 4 cloves garlic (can add more to taste)
- 6 chicken breasts (6× approx. 170 g)
- 1 teaspoon sweet ground paprika
- Salt
- Pepper
YOU WILL ALSO NEED
- Baking paper
- Toothpicks
INSTRUCTIONS
- 1First, prepare the filling: Peel and finely chop the onion. Heat 2 tablespoons of olive oil in a pan, and once the oil is hot, add the chopped onion and sauté over medium-low to medium heat for 2–3 minutes. Then add the baby spinach and let it wilt (approx. 1 minute).
- 2Transfer the sautéed onion and spinach to a medium-sized bowl. Add cream cheese, mayonnaise, finely chopped parsley, and finely grated Parmesan. Press 4 cloves of garlic into the bowl, mix everything with a fork, and season with salt and pepper.
- 3Wash, pat dry, and clean the chicken breasts. Make a cut in the thickest part of the meat to create a 'pocket' that you will fill with the cheese mixture. Fill the cut breasts with the prepared mixture and close the 'pocket' using a toothpick. Season the prepared chicken breasts with salt and pepper, and sprinkle sweet ground paprika on both sides.
- 4Preheat the oven to 180 °C and line a baking dish (approx. 30 cm × 20 cm) with baking paper.
- 5Clean the pan in which the spinach was cooked and heat the remaining 2 tablespoons of olive oil in it over high heat. Place the chicken breasts into the hot oil and sear for about 1–2 minutes on each side over high heat until golden brown.
- 6After searing, transfer the breasts from the pan to the baking dish and bake at 170–180 °C for 20–25 minutes.
- 7Divide the finished stuffed chicken breasts onto individual plates and serve.
Tip
If you have any filling left over, you can spread it over the surface of the chicken breasts before baking, or use it as a spinach-cheese spread – with freshly baked bread or a roll, it makes a quick breakfast or snack. – You can also add 2 tablespoons of finely chopped sun-dried tomatoes to the filling along with the garlic and cream cheese.
