- 500 g chicken breasts (cut into smaller cubes)
- 1 tablespoon Herbes de Provence
- 3 tablespoons rapeseed oil
- 1 large yellow onion
- 3 cloves garlic
- 300 ml chicken broth (or vegetable broth, can also be replaced with bouillon)
- 400 g dry gnocchi
- 250 ml cooking cream (12% fat)
- 200 g fresh spinach (or 200 g thawed)
- 60 g Parmesan (finely grated)
- Salt
First, season the chicken with Herbes de Provence, salt, and pepper.
In a large pan, heat oil over medium to high heat, then add the chicken and sauté for 6–8 minutes over medium heat. Meanwhile, finely chop the onion and press the garlic.
Remove the cooked meat from the pan and add the onion and garlic. Sauté for 2–3 minutes, then pour in the broth and let it simmer for 2–3 minutes over low to high heat. Next, add the gnocchi, slowly stir in the cream, and cook for 2–3 minutes. Then add the spinach and chicken and cook for another 2 minutes. Finally, sprinkle Parmesan into the pan, season with salt and pepper, and serve.
