INGREDIENTS
- 10 cherry tomatoes
- 1 small clove of garlic
- 8 basil leaves
- 1 tablespoon olive oil
- 1 teaspoon butter
- salt
- freshly ground pepper
- 2 eggs
INSTRUCTIONS
- 1Cut the tomatoes into quarters, place them in a bowl, and lightly mash them with a fork. Finely chop the garlic and 6 basil leaves.
- 2In a pan over medium heat, melt the oil and butter, add the garlic, and sauté until golden. Add the basil and mix. Add the tomatoes and sauté for 1 minute. Season with a pinch of salt and pepper and mix. Pour in 1 tablespoon of water and mix.
- 3Crack the eggs over the tomatoes, season with salt and pepper, and cover the pan with a lid. Bake for 3 minutes or until the egg whites are set. Transfer to a plate and garnish with the remaining basil.
