DRESSING

  • 8 g mustard seeds
  • 50 ml olive oil
  • 1 teaspoon soy sauce
  • 6 teaspoons honey
  • pinch of salt
  • pinch of freshly ground pepper
  • pinch of chili
  • 15 ml lime juice

SALAD

  • 30 g lollo biondo or frisée lettuce
  • 30 g arugula
  • 20 g beet leaves or lamb's lettuce
  • 100 g feta cheese
  • 200 g watermelon flesh
  • 30 g pine nuts

WINE PAIRING

  • The salad's flavor is best highlighted when paired with fresh, light wines. Choose white or sparkling wines with juicy acidity.

    Dry-roast mustard seeds in a hot pan until golden, then transfer to a bowl.

    Whisk olive oil with lime juice, soy sauce, and honey. Season with salt, pepper, add chili, and mix.

Salad instructions

    Soak the lettuces in ice water for 15 minutes.

    Cut the cheese into 2×1.5×1.5 cm cubes. Cut the watermelon into larger pieces.

    Dry-roast pine nuts in a hot pan until golden and let cool.

    Drain the lettuces, pat dry, and place in a bowl.

    Add cheese, watermelon, and pine nuts and mix. Pour dressing over and mix again.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
