DRESSING

- 6 teaspoons honey
- pinch of salt
- pinch of freshly ground pepper
- pinch of chili
- 15 ml lime juice
SALAD
- 30 g lollo biondo or frisée lettuce
- 30 g arugula
- 20 g beet leaves or lamb's lettuce
- 100 g feta cheese
- 200 g watermelon flesh
- 30 g pine nuts

Dressing instructions
- 1Dry-roast mustard seeds in a hot pan until golden, then transfer to a bowl.
- 2Whisk olive oil with lime juice, soy sauce, and honey. Season with salt, pepper, add chili, and mix.
Salad instructions
- 1Soak the lettuces in ice water for 15 minutes.
- 2Cut the cheese into 2×1.5×1.5 cm cubes. Cut the watermelon into larger pieces.
- 3Dry-roast pine nuts in a hot pan until golden and let cool.
- 4Drain the lettuces, pat dry, and place in a bowl.
- 5Add cheese, watermelon, and pine nuts and mix. Pour dressing over and mix again.
