- 200 g white quinoa
- 1 red onion
- 2 cloves of garlic
- 250 g tomatoes
- 1 English cucumber
- 2 avocados
- 2 tablespoons extra virgin olive oil
- 1 lemon
- 1 tablespoon wine vinegar
- 1 handful of fresh herbs
- 1 teaspoon sea salt
- 1 pinch ground black pepper
Thoroughly rinse the quinoa with warm water. Salt 600 ml of water with 1 teaspoon of salt, bring to a boil, and pour the quinoa into it. Bring to a boil, reduce the heat to minimum, and simmer for 15 minutes. Pour the cooked quinoa into a bowl and let it cool.
Finely chop the onion and garlic. Cut the tomatoes and cucumber into 2 cm cubes. Cut the avocados in half, remove the pit, scoop out the flesh with a spoon, and cut it into 2 cm cubes.
In a bowl, mix the tomatoes, cucumber, and red onion. Add the olive oil, lemon juice, and wine vinegar, and mix. Add the avocado, garlic, herbs, and cooled quinoa. Mix and season with salt and pepper to taste.
