PULLED MEAT
- 1 kg pork neck
- 1 tablespoon vegetable oil
- 10 g salt
- 1 tablespoon coarsely ground pepper
SALAD
- 100 g cashews
- 4 tablespoons light sesame seeds
- 500 g peeled salad cucumber
- 60 g spring onion
- 50 ml sesame oil
- 6 tablespoons coarsely chopped coriander
- 1 tablespoon coarsely chopped mint
- 6 tablespoons lime juice
- finely chopped chili pepper to taste
- pinch of freshly ground pepper
- pinch of salt

PULLED MEAT INSTRUCTIONS
- 1Preheat the oven to 100 ˚C.
- 2Rub the meat on all sides with oil, season with salt and pepper. Place it in a roasting pan, add water to a height of 1.5 cm, and cover thoroughly with aluminum foil.
- 3Place in the preheated oven for 10 hours. Then remove the aluminum foil, baste with the pan juices, and return to the oven for another 4 hours.
- 4Let the meat cool partially in the roasting pan so that it remains just warm. Then, using forks, shred it into small pieces directly in the roasting pan. Mix thoroughly with the pan juices in the roasting pan and transfer to a bowl.
SALAD INSTRUCTIONS
- 1Preheat the oven to 160 ˚C.
- 2Place cashews on a baking sheet, put into the preheated oven, and bake for 12 minutes. Transfer to a plate and let cool.
- 3Dry-roast sesame seeds, stirring constantly, for 1 minute in a hot pan. Transfer to a plate and let cool.
- 4Cut the cucumber lengthwise. Scoop out and discard the seeds with a spoon, then slice the flesh into 0.5 cm thick pieces. Finely chop the spring onion.
- 5Mix all ingredients together in a bowl.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
