SALAD INGREDIENTS
- 180 g ripe apples
- 450 g ripe pears
- 50 g walnuts
- 100 g Niva cheese
- 150 g cauliflower florets
- 1 tablespoon finely chopped chives
- 100 g red grapes
DRESSING INGREDIENTS
- 100 g maple syrup
- 20 ml olive oil
- 10 ml apple cider vinegar
- pinch of salt
- pinch of pepper

- The salad's flavor is best enhanced when paired with fresh, light wines. Choose white or sparkling wines with juicy acidity.
SALAD INSTRUCTIONS
- 1Core the apples and pears and cut the flesh into 1.5 cm cubes. Mix them in a bowl with the dressing.
- 2Crumble the Niva cheese into smaller pieces. Dry-roast the nuts for 1 minute in a pan over high heat and set aside.
- 3Cut the grape berries in half. Cut larger cauliflower florets.
- 4Add the Niva cheese, roasted nuts, cauliflower florets, grapes, and chives to the bowl with the apples and pears and mix.
DRESSING INSTRUCTIONS
- 1Whisk all ingredients together in a bowl.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
