INGREDIENTS
- 100 g bread, at least one day old
- 100 ml olive oil + 1 tbsp olive oil for seasoning
- 200 g ripe tomatoes
- 50 g peeled red onion
- 8–10 basil leaves
- 50 ml red wine vinegar
- salt
- freshly ground pepper
INSTRUCTIONS
- 1Preheat the oven to 190 °C.
- 2Trim the crusts from the bread and cut it into 1.5 cm cubes. Place in a bowl, season with salt and pepper, pour in olive oil, mix, and spread onto a baking sheet. Place in the preheated oven and bake for 7 minutes. Let cool.
- 3Cut the tomatoes into larger pieces. Finely chop the onion. Tear the basil.
- 4In a bowl, combine the chopped tomatoes, onion, and basil. Season with salt and pepper. Add the toasted bread, wine vinegar, and olive oil. Mix the salad and let it rest for 1 hour at room temperature. Mix before serving.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
