DOUGH INSTRUCTIONS
Crumble the yeast into a bowl and sprinkle with a pinch of sugar. Pour in some lukewarm milk, whisk, and gradually add plain flour while stirring until a thin batter forms. Dust the surface with flour and let rise for 10 minutes.
Preheat the oven to 170 °C. Line a baking sheet with parchment paper.
Put the risen starter into a food processor, add the rest of the milk, sugar and flour, vanilla sugar, oil, egg, and lemon zest, and mix slowly until a smooth, non-sticky dough forms. 极
Chef's tip
Preparation will be easier with a stand mixer with a dough hook attachment. You can create the dough edges with the edge of your hand. The dough is enough for one baking sheet measuring 35×25 cm. You don't have to add cinnamon to the crumble topping. If you want a more buttery crumble, add 50 g more butter.
