- 700 g pears
- 100 g granulated sugar
- 1 teaspoon lemon juice, peel from ½ lemon and 1 lemon slice
- 5 pcs cloves
- 2 whole cinnamon sticks
- 2 star anise pods

Peel the pears, cut them into eighths, and remove the cores. Place them in a saucepan, drizzle with lemon juice, and pour in 700 ml of water. Add the remaining ingredients and bring to a boil. Reduce the heat to one-third and cook for approximately 20 minutes, until the pears are soft. You can either serve the compote immediately or fill it into clean jars and sterilize for 30 minutes at 85 °C.
Chef's tip
The pears should be soft, not overcooked. Use only the yellow part of the lemon peel; the white part is bitter. Those who prefer sweeter compotes can add more sugar. Thanks to the lemon juice, the pears will not brown.
