- 1 ripe pineapple
- 200 ml orange juice
- 50 ml Metaxa
- 2 tablespoons granulated sugar
- 1 cinnamon stick
- brown sugar for coating

Peel the pineapple and cut it into equally thick slices. Remove the hard core of the pineapple with a round pastry cutter. Coat the pineapple slices in sugar and grill them on both sides.

In a pan, lightly caramelize the sugar. Add orange juice and cinnamon and stir until the sugar dissolves. Add the grilled pineapple, reduce the liquid to one-third of its volume, pour in the Metaxa, and flambé.
Chef's tip
Serve with vanilla ice cream.
