INGREDIENTS
- 2 medium-sized zucchini (400 g)
- 1 medium-sized egg
- 30 g Parmesan (finely grated, optional)
- 50 g plain white wheat flour
- 4 cloves of garlic
- 3 tablespoons of rapeseed oil
- Salt
- Pepper
INSTRUCTIONS
- 1First, prepare the zucchini: Wash the zucchini, grate them coarsely, salt them, set aside, and let them release water.
- 2After some time, squeeze out any excess water from the zucchini and place the grated zucchini into a medium-sized bowl along with 1 egg, finely grated Parmesan, and plain flour. Peel the garlic and press it into the bowl. Mix everything, season with salt and pepper, and form patties (⌀ 6–7 cm) from the resulting mixture.
- 3In a medium-sized pan, heat 3 tablespoons of rapeseed oil over medium heat. Then, place the prepared patties into the hot oil and fry for 2–3 minutes on each side until golden brown.
- 4Divide the finished fritters into individual portions and serve.
