SALAD INGREDIENTS

  • 180 g ripe apples
  • 450 g ripe pears
  • 50 g walnuts
  • 100 g Niva cheese
  • 150 g cauliflower florets
  • 1 tablespoon finely chopped chives
  • 100 g red grapes

DRESSING INGREDIENTS

  • 100 g maple syrup
  • 20 ml olive oil
  • 10 ml apple cider vinegar
  • pinch of salt
  • pinch of pepper

  • The salad's flavor is best enhanced when paired with fresh, light wines. Choose white or sparkling wines with juicy acidity.

    Core the apples and pears and cut the flesh into 1.5 cm cubes. Mix them in a bowl with the dressing.

    Crumble the Niva cheese into smaller pieces. Dry-roast the nuts for 1 minute in a pan over high heat and set aside.

    Cut the grape berries in half. Cut larger cauliflower florets.

    Add the Niva cheese, roasted nuts, cauliflower florets, grapes, and chives to the bowl with the apples and pears and mix.

    Whisk all ingredients together in a bowl.

For preparation, you will need a whisk and a pan.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
