INGREDIENTS
- 400 g fennel
- 1 sweet apple
- 2 oranges
- 2 tablespoons finely chopped mint
- 4 tablespoons olive oil
- 4 handfuls arugula
- juice of 1 lemon
- ½ teaspoon granulated sugar
- salt
- pepper
WINE PAIRING
- The salad's flavor is best highlighted when paired with fresh, light wines. Choose white or sparkling wines with juicy acidity.
INSTRUCTIONS
- 1Cut off the tops from the fennels, halve the bulbs lengthwise, remove the tough core, and then slice them into thin pieces, about 1–2 mm thick. Place them in a bowl of ice water for 10 minutes; this will make them crispier. Afterward, remove them and let them drain in a colander.
- 2Core the apple and slice the flesh into thin pieces.
- 3Peel the oranges and cut out individual segments. Squeeze the juice from the remaining pulp into a bowl.
- 4In a bowl, combine all ingredients and mix. Season with a pinch of salt and freshly ground pepper and mix.
