SALAD INGREDIENTS

  • 1 kg of tomatoes of various kinds, colors, and sizes
  • 50 g peeled red onion
  • 10 g flat-leaf parsley leaves
  • 1 teaspoon salt

DRESSING INGREDIENTS

  • 50 g white wine vinegar
  • 50 g granulated sugar
  • 75 g olive oil

WINE PAIRING

  • The salad's flavor is best highlighted when paired with fresh, light wines. Choose white or sparkling wines with juicy acidity.

SALAD INSTRUCTIONS

    Cut the tomatoes according to their size – smaller ones (e.g., cherry tomatoes) into halves, larger ones into quarters, sixths, or slices.

    Slice the onion very thinly, rinse it in ice water, and let it drain. Roughly chop the parsley.

    In a bowl, mix the chopped tomatoes, drained onion, parsley, and salt.

    Before serving, pour the dressing over the salad and mix.

DRESSING INSTRUCTIONS

    In a bowl, combine the ingredients and whisk them until the sugar dissolves. Whisk the dressing again before serving.
Tip
The prepared dressing will last up to a week in the refrigerator in a sealed container. You can blanch the sliced onion for 5 seconds in boiling water and immediately transfer it to a bowl of ice water to stop it from cooking further. Then let it drain. This will remove its pungent taste.
