SALAD METHOD
Cut the tomatoes according to size – smaller ones (e.g. cherry tomatoes) in halves, larger ones into quarters, sixths or slices.
Slice the onion very finely, rinse it in ice water and let it drain. Coarsely chop the parsley.
In a bowl, mix the sliced tomatoes, drained onion, parsley and salt.
Chef's tip
The finished dressing will keep in the fridge in a closed container for up to a week. You can blanch the sliced onion for 5 seconds in boiling water and immediately transfer it to a bowl of ice water to stop it cooking further. Then let it drain. The onion will lose its sharp taste.
