DOUGH AND COMMON INGREDIENTS
- 150 g all-purpose flour
- 100 g softened butter
- 50 g powdered sugar (for dough and dusting)
- 40 g vanilla sugar (for dough and filling)
- 3 eggs (for dough and filling)
- zest of 1 lemon (for dough and filling)
FILLING
- 500 g full-fat soft curd cheese
- 180 g cream (min. 31 %)
- 140 g granulated sugar
- 40 g vanilla pudding powder

PAIRING THE DISH WITH COFFEE

INSTRUCTIONS
- 1Preheat the oven to 180 °C.
- 2Place all dough ingredients into a stand mixer bowl and process with a K-beater attachment until a firm dough forms. Line a springform pan with baking paper and press the dough evenly into it with your fingers. Set aside.
- 3Whip the cream until stiff. Mix all other filling ingredients in a bowl, then gradually fold in the whipped cream by hand using a spatula. Pour the filling evenly into the pan over the dough.
- 4Place into the preheated oven and bake for 45 minutes. The surface of the cake should turn golden brown and spring back when pressed with fingers. Let cool and serve dusted with powdered sugar.
Tip
Grate only the yellow part of the lemon zest. The white part is bitter.
