INGREDIENTS
- 140 g cracked groats
- 140 g lentils
- 80 g peeled carrots
- 1 tablespoon butter
- 100 ml chicken or vegetable broth
- 1 tablespoon vinegar
- 20 g granulated sugar
- 80 g streaky bacon
- 1 tablespoon flat-leaf parsley leaves
- pepper
- salt
INSTRUCTIONS
- 1Cook lentils and groats separately in salted water according to package directions. Drain them and mix together.
- 2Cut carrots and bacon into 0.5 cm cubes.
- 3In a pan over medium heat, melt butter and sauté carrots for 1 minute, stirring constantly. Add to lentils and groats. In the same pan, sauté bacon for 2 minutes and mix it into the lentils, groats, and carrots.
- 4Heat the broth, add sugar and vinegar, and let the sugar dissolve. Pour over the lentils with groats, carrots, and bacon. Carefully and gently mix everything. Season with salt and pepper to taste.
- 5Finely chop parsley and stir it into the salad. Let it rest in a warm place for a while so that all the flavors combine and the liquid is absorbed into the lentils and groats. Serve the salad with fish.
Tip
Do not overcook the lentils and groats. For cooking, you need approximately three times more water than the amount of legumes.
Instead of groats, you can use cooked buckwheat.
You can also serve the salad lukewarm.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
