Ingredients overview

  • 160 g crushed sponge biscuits (+ for finishing)
  • 160 g powdered sugar (+ for the filling and coating)
  • 60 g softened butter (+ for the filling)
  • 15 g cocoa
  • 2 tbsp tuzemák (+ for the filling)
  • 1 egg white
  • a pinch of ground star anise
  • a pinch of ground cinnamon
  • 10 g vanilla sugar

Dough preparation

Work all the ingredients into a smooth dough, wrap it in cling film and let it rest in the fridge until the next day.

Filling preparation

Whip all the ingredients into a foam.

Finishing process

Shape the dough into balls proportional to the size of the mould and coat them in powdered sugar. Press the ball into the mould and make a well inside using the reverse end of a wooden spoon, then fill it with the filling. Cover with a sponge biscuit and remove from the mould.

Chef's tip

To prepare, you will need beehive moulds and cling film.
