INGREDIENTS
- 1 ripe pineapple
- brown sugar for coating
- 2 tablespoons granulated sugar
- 200 ml orange juice
- 1 cinnamon stick
- 50 ml Metaxa

- vanilla ice cream
Instructions
- 1Peel the pineapple and slice it into equally thick rounds. Using a round pastry cutter, remove the hard core from the pineapple. Coat the pineapple slices in sugar and grill them on both sides.
- 2In a pan, lightly caramelize the sugar. Add orange juice and cinnamon and stir until the sugar dissolves. Add the grilled pineapple, reduce the liquid to one-third of its volume, pour in the Metaxa, and flambé.
Tip
Serve with vanilla ice cream.
