Preparation method
Peel the onion and slice it thinly. Cut the ham into thin strips. Then, in a large pan over medium heat, warm 2 tablespoons of olive oil, add the sliced onion, ham, and thyme, reduce the heat to low, and slowly sauté the mixture for 9–10 minutes, stirring occasionally.
Meanwhile, preheat the oven to 180–185 °C and prepare a baking sheet (30 cm × 40 cm), lining it with parchment paper. Then, prepare a large bowl, add 30 g of Greek yogurt, 200 g of spelt flour, 130 ml of water, baking powder, salt, and pepper, and knead into a firm, elastic dough that doesn't stick.
Once the mixture in the pan is cooked, turn off the heat. Next, flour your work surface with 20 g of spelt flour, turn out the prepared dough onto the floured surface, roll it out to a thickness of 1 cm using a rolling pin, and then transfer the dough to the lined baking sheet. Spread the remaining 70 g of yogurt and the sautéed mixture from the pan over the dough. Place the pie prepared in this way into the oven and bake for 30–35 minutes at 180–185 °C.
Chef's tip
Before spreading the yogurt on the dough, you can press 2 cloves of garlic into it and add finely chopped fresh thyme.
