INGREDIENTS FOR BATTER
- 70 g white fine buckwheat flour
- 110 g wholemeal spelt fine flour
- 3 eggs
- 500 ml semi-skimmed milk
- Salt
INGREDIENTS FOR FILLING
- 450 g apples
- 2 tablespoons butter
- 1 tablespoon honey
- 2 teaspoons ground cinnamon
INSTRUCTIONS
- 1Sift buckwheat and spelt flour into a large bowl. Then add eggs, milk, and a pinch of salt to the bowl and mix everything. Let the resulting batter rest for 10 minutes.
- 2Meanwhile, prepare the apple filling: wash the apples, core them, and cut them into cubes. Then, heat 2 tablespoons of butter in a non-stick pan, add the chopped apples, and sauté them for 5 minutes over medium heat. Afterward, turn off the heat, add honey and cinnamon to the pan, and mix everything.
- 3Now, prepare another non-stick pan, heat it dry, and get the rested batter ready. Gradually cook pancakes from the batter in the pan over medium heat (approx. 1 minute per side). The batter should be enough for approximately 10 pancakes.
- 4Fill the finished pancakes with the prepared apple mixture, roll them up, and serve.
