Preparation method
Peel and pit the avocado and cut it into cubes. Slice the radishes and dice the celery stalks. Roughly chop the mint and finely chop the onion. Then mix all prepared ingredients in a bowl. Season the mixture with salt and pepper. Place the bowl with the mixture in the fridge for now.
Finally, prepare poached eggs – just crack both eggs into a heated pan and cover with a lid (preferably transparent) for about 5 minutes. Cook the eggs until the whites are completely set. Cook the yolk to your liking – after 5 minutes under the lid, it will be runny, and after approximately another 3 minutes, it should be fully cooked and thus suitable for children.
Prepare 2 slices of whole-grain bread, toast them in a pan or put them in a toaster for a while.

Before serving, we sprinkled the avocado toast with a handful of fresh cress.
