INGREDIENTS

  • 500 ml soy milk
  • 4 egg yolks
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey
  • 2 tablespoons potato starch
  • 1 teaspoon liquid coconut oil
  • 100 g whole oat flakes
  • 200 g fresh forest fruit mix

INSTRUCTIONS

    Pour 150 ml of milk into a bowl and mix in the egg yolks, vanilla extract, honey, and starch.

    Carefully mix the mixture in the bowl to prevent lumps from forming.

    Pour the remaining milk into a saucepan and bring to a boil over medium heat.

    Then pour the contents of the bowl into the boiling milk and stir until thickened.

    Prepare a non-stick pan, heat coconut oil in it, add oat flakes and sauté over low heat for about 5 minutes until the flakes are golden. Finally, stir cinnamon into the flakes.

    Prepare 4 glasses and layer pudding, oat flakes, and washed forest fruit into them. If you don't want to consume the pudding immediately, sprinkle it with flakes just before serving.

    The finished pudding can be stored for a maximum of 3 days in the refrigerator.
Tip
If you have extra toasted cinnamon flakes, you can easily use them in breakfast yogurt, for example.
