- 400 g cherry tomatoes
- 6 cloves of garlic
- 3 tablespoons olive oil
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- 1 tablespoon dried thyme 1 teaspoon cane sugar
- Zest from 1 medium lemon (finely grated) + juice from 1 medium lemon
- 200 g Greek yogurt (0 % fat)
- Salt
- Pepper
- Fresh basil
- Fresh oregano
First, preheat the oven to 195–200 °C and prepare a baking dish at least 20 cm × 25 cm in size.
Place the cherry tomatoes and unpeeled garlic cloves into the baking dish. Then, in a small bowl, combine 3 tablespoons of olive oil, oregano, thyme, cane sugar, lemon zest and juice, salt, and pepper, and mix. Apply the resulting mixture to the cherry tomatoes with garlic, mix, place the baking dish into the preheated oven, and bake for 20–22 minutes at 195–200 °C.
Now take 2 bowls, divide the Greek yogurt into them, and arrange the roasted cherry tomatoes on top. Then, squeeze the roasted garlic cloves from their skins into the bowls (3 cloves per bowl). Finally, divide the juice from the baking dish into the bowls and serve.
Chef's tip
Garnish the finished dish with fresh basil or fresh oregano.
