COFFEE PAIRING

  • This dish is best enjoyed with quality coffee.

METHOD

  • 1
Melt the butter in a saucepan over low heat. Mix the flour with baking powder. Crack the eggs into a large bowl, pour in the milk, add sugar, vanilla sugar, and salt, and whisk. While continuously stirring, add the flour with baking powder. Finally, stir in the melted butter and let the batter rest for 10 minutes.
  • 2
Peel the apples, cut them into eighths, and core them. Place the apples in a bowl, sprinkle with cinnamon, and mix.
  • 3
Heat a generous layer of oil in a saucepan over medium heat.
  • 4
Dip the apples into the batter and immediately place them into the hot oil. Stir them to prevent sticking to the bottom of the saucepan. Fry the apples for 6 minutes until golden brown. Once done, place them on a plate lined with kitchen paper to absorb excess fat. Sprinkle the apples with powdered sugar on the plate.
Tip
You can fry the apples in clarified butter. They will be more fragrant. You can drizzle the fried apples with maple syrup or warm honey.
