INGREDIENTS

  • 800 g apples
  • 1 teaspoon lemon juice, zest from ½ lemon and 1 lemon slice
  • 100 g granulated sugar
  • 2 whole cinnamon sticks
  • 2 star anise pods
  • 5 pcs cloves

INSTRUCTIONS

    Peel the apples, cut them into eighths, and remove the cores. Place them in a saucepan, drizzle with lemon juice, and pour in 700 ml of water. Add sugar, cinnamon, star anise, cloves, lemon zest, and a lemon slice. Cook over low heat for approximately 20 minutes, until the apples are soft. Serve the compote preferably still warm.
Tip
Use only the yellow part of the lemon peel, the white part is bitter. Apples must be soft, not overcooked. Thanks to the lemon juice, the apples will not brown.

Tip: Serve this salad best with a slice of fresh sourdough bread or as a side dish to Vienna sausages. For a lighter version, you can replace part of the mayonnaise with plain yogurt or sour cream.
