Preparation method

Rinse the sushi rice thoroughly several times in cold water until the water runs almost clear. Add water, cover with a lid, and bring to a boil. As soon as it starts to boil, reduce the heat to minimum and cook for 15 minutes without lifting the lid. Then remove the pot from the heat and let it rest for another 10 minutes.

Meanwhile, prepare the seasoning. In a small saucepan, mix the rice vinegar, sugar, and salt. Warm briefly to dissolve the sugar and salt, and let it cool slightly.

Transfer the hot cooked rice to a bowl and gently fold in the prepared seasoning. Let it stand for 5 minutes and allow to cool to room temperature, stirring occasionally. The rice should be sticky, hold its shape, and yet keep individual grains distinct.
