INGREDIENTS
- 4 large sweet potatoes
- Bunch of kale (approx. 200 g)
- 1 package feta cheese
- 2 tablespoons olive oil
- Salt
- Pepper
INSTRUCTIONS
- 1Thoroughly wash the sweet potatoes in warm water and dry them. Pierce each one in several places with a fork and place them on a baking sheet or roasting pan lined with parchment paper. Bake the sweet potatoes at 200°C until tender – this takes approximately 45 minutes.
- 2Meanwhile, chop the kale into small pieces and mash the feta with a fork. Transfer everything to a large bowl and mix with 2 tablespoons of olive oil.
- 3Remove the cooked sweet potatoes from the oven and cut each one lengthwise on top so you can easily scoop out the flesh. Add the scooped-out flesh to the bowl with the feta and kale, season with salt and pepper, and mix thoroughly.
- 4Fill the hollowed-out sweet potato skins with the mixture and bake again for approximately 10 minutes.
