- Juice of 1 lime

INSTRUCTIONS
- 1Cook the lentils until soft (about 30 minutes). Finely chop the coriander along with the tomatoes, slice the onion into thin half-moons, and mix everything with the cooked lentils. Season the salad with salt, pepper, and lime juice, and serve.
Tip
If you don't have fresh coriander on hand, replace the specified amount with ½ teaspoon of dried coriander or a mixture of dried oregano and ground cumin. Alternatively, add any herb you have in your garden to the salad.
